A very agreeable aperitif that may serve as a companion with asparagus with butter cream sauce and a dusting of celery salt.

Saltire Rare Malt Whisky Company is an independent bottler specialising in selecting and bottling rare and high quality Scotch whiskies. Tasting note
This pale gold whisky is slightly mineral in the nose at first, then followed by toasted banana bread. Then aromas remind one of walking on a green wet lawn while tasting fresh sour cherries.
Later a clear vegetal note of cooked asparagus sprinkled with lemon juice arrives, over a background of wet sawdust.
On the palate, it is really fruity and vegetal, with the emphasis on the latter. After a while longer, angelica appears during a pleasant, slightly bitter finish that does not linger. Add a few drops of water and notice an increased creaminess in the mouth-feel.
Tamnavulin Distillery
Tamnavulin Distillery is located in the picturesque village of Tomnavoulin, in Scotland's famous Speyside region. Established in 1966, Tamnavulin is a relatively young distillery compared to many of its neighbours. Located at the foot of the Cairngorms, it draws its water from the clear spring of the Easterton Burn, which contributes to the purity of the whisky.
Tamnavulin focuses on accessibility with modern production processes, while respecting traditional methods. The distillery uses both ex-bourbon casks and sherry casks for maturation, ensuring a balanced and complex flavour. Tamnavulin whiskies are known for their smooth and fruity character, with notes of apple, pear, honey and subtle hints of vanilla and spice.
Tamnavulin was reopened in 2007 after a period of closure, and since then the distillery has made significant investments to maintain production and quality. The combination of a beautiful location, modern innovations and traditional techniques makes Tamnavulin a respected name in the world of Scotch whisky.
