Nose

Fresh and aromatic with juniper, citrus peel and a clear lavender note. Behind that: gentle Mediterranean herbs and a subtle floral sweetness, without becoming perfumed or heavy.

Palate

Dry and elegant with juniper and citrus as the foundation. Lavender adds refined floral roundness, while herbal spice brings balance and tension. Fresh, focused and very drinkable throughout.

Finish

Medium length and refined with lingering lavender, citrus and gentle herbal dryness.

GINRAW is a Spanish premium gin developed in Barcelona around a distinctive idea: to create a gin capable of matching the city’s ambitious gastronomic culture. Its development brought together expertise from four different disciplines. Chef Xano Saguer, sommelier Sergi Figueras, mixologist Javier Caballero and master perfumer Rosendo Mateu collaborated on a gin in which flavour, aroma and culinary refinement take centre stage.

Production combines traditional and modern techniques. Juniper is distilled in the classic manner, while a selection of fresh botanicals is processed separately at low temperature using a Rotaval, a technique originating from modern gastronomy. This approach helps preserve particularly delicate and volatile aromas.

Mediterranean ingredients such as lemon, citron and bay leaf are combined with kaffir lime leaves, black cardamom and coriander seed. The range was later expanded with expressions centred around ingredients including cherry blossom, lavender and orange blossom. GINRAW therefore brings together classic gin, modern distillation techniques and the gastronomic culture of Barcelona in a distinctly individual style.
