Both tropical and classic notes make the indie trio's Cognac Petite Champagne L45 a highly complex experience. One reason for this is the traditional Remy method. This involves distilling the cognac along with the natural wine segment, i.e. without filtering out yeast and cloudy components before the distillation process.
It is also stored in a particularly humid cellar, partially buried in the ground. This special process provides additional flavour dimensions and preserves the alcohol content, allowing the cognac to be bottled at a strong 60% full even after 78 years.
