This is the third version from the Sherry Collection trilogy. This 17-year-old Tomatin has undergone maturation on Pedro Ximénez Butts.
Tasting note
Nose
On first encounter, a lush aroma of dark fruits such as dried plums and sultanas emerges, enriched with notes of dark chocolate and espresso. Subtle hints of leather and tobacco add an extra layer of depth, while a touch of orange peel and caramelised sugar round off the nose.
Taste
On the tongue, a rich and velvety flavour profile unfolds. Deep notes of stewed figs and dates mingle with the sweetness of toffee and honey. The influence of Pedro Ximenez sherry casks creates an intense, almost syrupy texture, with flavours of mocha and dark caramel beautifully balanced with a light, spicy undertone of cinnamon and clove.
Finish
The finish is long and luxurious, with lingering notes of dried fruit and a warm sweetness of melted chocolate. The spices remain subtly present, while a final touch of sherry and oak complete the experience and provide a satisfying aftertaste.
Tomatin Distillery
Tomatin Distillery is located at the foot of the Monadhliath Mountains, just south of Inverness in the Scottish Highlands. Founded in 1897, Tomatin has a rich history and is one of the highest-ranking distilleries in Scotland. Over the years, the distillery has developed into a major producer of single malt whisky.
A unique feature of Tomatin is the use of local water from the Alt-na-Frith Burn, which contributes to the pure character of their whiskies. Tomatin is known for its smooth and fruity whiskies, with notes of apple, pear, vanilla and a hint of spice. The whiskies are mainly matured in a mix of ex-bourbon and sherry casks, ensuring a rich and balanced flavour.
