Bottled by Signatory Vintage at 57.1% ABV (100 Proof), this whisky delivers a powerful and characterful profile with the signature Orkney influences: subtle peat smoke, floral notes, and a perfect balance of sweetness and spice. The maturation in carefully selected casks adds extra depth and complexity, making this a fascinating dram for lovers of classic island whiskies.
Tasting Notes
Nose
A refined mix of honey, heather flowers, and gentle peat smoke, complemented by hints of dried fruit and vanilla. There are also nuances of salty sea air and spicy oak tones that enhance the depth.
Taste
Rich and full-bodied with flavors of caramel, apple, and roasted nuts, combined with a soft smokiness. The oak influence brings a light peppery spice, while subtle hints of citrus and heather honey add an enjoyable sweetness.
Finish
Long and layered, with lingering hints of peat, dried herbs, and a light maritime salinity. The balance between smoke, sweetness, and spice lingers elegantly, giving the whisky an impressive finale.
Highland Park Distillery
Highland Park Distillery is located on the Orkney Islands, north of mainland Scotland, near the town of Kirkwall. Founded in 1798, Highland Park is one of the oldest legal distilleries in Scotland and has a rich history dating back to the illegal distillery of Magnus Eunson, a local smuggler and church official.
A specific feature of Highland Park is the use of locally extracted peat, from the Hobbister Moor, which gives a unique and subtle smoke note to the whisky. In addition, the distillery still partly uses traditional floor malting methods, where the barley is turned by hand during drying. Highland Park whiskies are known for their complex and balanced flavour profiles, with notes of honey, heather, fruit and a distinctive light smokiness.
The whisky is mainly matured in European and American oak sherry casks, which contributes to its rich, deep flavours and aromas. Highland Park remains an icon in the whisky world, valued for its tradition and craftsmanship.
