Daftmill 2011 - 2024 Winter Batch Release is an exclusive single malt whisky from the artisanal Daftmill Distillery in Fife, Scotland. This small family-owned distillery, owned by the Cuthbert family, produces whiskies in limited quantities and releases only a few releases a year. The Winter Batch Release 2024 was distilled in 2011 and matured for more than 12 years in 27 carefully selected first-fill ex-bourbon barrels, creating a smooth, refined taste with pronounced fruity notes.

Tasting note

Nose

On the nose, this Daftmill whisky offers fresh aromas of green apple, honey and vanilla, accompanied by subtle notes of grass and a hint of citrus.

Daftmill Distillery

Daftmill Distillery is located in the heart of Fife, Scotland, on a working farm owned by the Cuthbert family since 1984. Founded in 2005 by Francis Cuthbert, Daftmill is one of the few distilleries that runs entirely on seasonal production, distilling whisky during the quieter farming months of summer and winter.

A specific feature of Daftmill is the use of its own barley, grown on the farm, which ensures complete control over the quality of the base ingredient. The distillery has two traditional copper pot stills and produces a limited quantity of whisky, highlighting the exclusivity and high quality of their products. Daftmill whiskies are known for their smooth, fruity and floral character, with notes of apple, pear and honey. Maturation takes place in ex-bourbon and ex-sherry casks, contributing to the complexity and depth of flavour profiles Daftmill offers.

Daftmill Distillery is located on a working family farm in the Howe of Fife, near Cupar. The Cuthbert family farmed the land as tenants for many years before purchasing Pitlair Estate, which includes Daftmill, in 1984. In 2003, brothers Francis and Ian Cuthbert applied for permission to convert the old mill buildings into a distillery, using local craftsmen wherever possible. A distilling licence was granted on 30 November 2005, and the first spirit was produced on 16 December that year. The first whisky was not released until 2018: a twelve-year-old Inaugural Release of only 629 bottles.

Daftmill is distinguished by the way distilling remains entirely governed by the farming calendar. Production takes place only during quieter periods in winter and midsummer, sometimes yielding no more than one hundred casks a year. The barley is grown on the farm and the water comes from its own artesian well. By-products from mashing and distillation are reused as cattle feed, fertiliser or a source of heat. Daftmill therefore operates not as a whisky attraction, but as an exceptionally small farm distillery in which agriculture and whisky production form a single working system.
