Paul Launois Monochrome #7 Blanc de Blancs

The Paul Launois Monochrome #7 Blanc de Blancs is a pure and precise Grand Cru Champagne from Le Mesnil-sur-Oger, located in the prestigious Côte des Blancs. This cuvée focuses on finesse, minerality, and tension, with a very low dosage (Extra Brut) allowing the wine to fully express itself. A clean and elegant expression of Chardonnay grown on chalky soils.

Tasting Notes

Colour

Bright pale gold with a fine, lively mousse.

Aroma

Clean and refined aromas of citrus, lime, and green apple, complemented by white blossom, chalky notes, and subtle hints of brioche and butter.

Taste

Fresh and highly precise with lively acidity, citrus fruit, and pronounced minerality. The fine mousse highlights a saline edge, while gentle creaminess adds depth and texture.

Finish

Long and focused, with lingering mineral, lightly saline, and delicately toasted notes.

Food Pairing

Excellent with oysters, seafood, sashimi, sushi, and refined fish dishes. Also ideal as an aperitif for lovers of crisp, dry Champagne styles.

Producer

Champagne Paul Launois is based in Le Mesnil-sur-Oger, one of the most prestigious Grand Cru villages in the Côte des Blancs. Made from 100% Chardonnay. Vinification takes place mainly in stainless steel tanks (84%) and partly in oak barrels (16%), combining freshness with subtle complexity. With full malolactic fermentation and a very low dosage of around 1 g/l, the result is a pure, terroir-driven Champagne highlighting chalky minerality, salinity, and the finesse of Chardonnay.

Paul Launois

Champagne Paul Launois is a family estate with deep roots in Le Mesnil-sur-Oger, a Grand Cru village in the Côte des Blancs. The vineyards have belonged to the Launois family for generations, while the grapes and Champagnes were traditionally sold through the cooperative. After working abroad for nine years, Julien Launois decided to follow a new direction with his wife Sarah. In 2013 they acquired a winery building, which they renovated themselves, before producing their first independent harvest in 2015. The house was named after their son Paul, while Sarah, an artist and graphic designer, created its visual identity.

Paul Launois focuses mainly on Chardonnay from the chalk-rich vineyards of Le Mesnil-sur-Oger. The Champagnes are fermented and matured in stainless steel tanks and oak barrels, with low dosages that place freshness, minerality and tension at the centre of the style. The house is also known for its Single Barrel project, in which buyers select an individual barrel and can make choices regarding the ageing period, dosage and final number of bottles. Paul Launois combines the precision of Blanc de Blancs Champagne with an experimental and artistic approach.
