Located in the heart of Tuscany, Italy's Chianti region is iconic for its bold and robust Chianti and Chianti Classico wines. Cavaliere d'Oro therefore draws on the treasures of the Chianti region with their Chianti, Chianti Classico, Chianti Classico Riserva and single vineyard Chianti Classico Bellezza. These exceptional Chiantis were born at Castello di Gabbiano, the core of Cavaliere d'Oro's heritage.
Born from Gabbiano's legacy, Cavaliere d'Oro is the renewed Chianti Classico range in our portfolio. The Gabbiano wines you know and love, complete with a fresh new look. The name has its origins in the Middle Ages where the castle and vineyards were protected by the golden knight, Cavaliere d'Oro.
Castello di Gabbiano was founded in 1480 AD. Its portfolio includes a bold collection of wines from now all over Italy - namely Tuscany, Veneto, Puglia and Sicily. Federico Cerelli is the passionate and talented winemaker who joined Cavaliere d'Oro (then Castello di Gabbiano) in 2011. His extensive knowledge, passion and philosophy that combines respect for tradition with innovation results in delivering optimal quality. The distinctive golden knight logo serves as a steadfast symbol of this quality and recognition of the rich heritage that spans more than 500 years of producing quality wines.
Only the best grapes are selected from its own vineyards. The different plots are vinified separately from each other, giving the winemaker a tantalising range of flavours and textures to work with. The fermentations matured the wine for 10 months in neutral French oak barrels, only 10% of which were new oak. The wine then underwent a further 12 months of bottle aging before release.
The wine has a deep ruby red colour. In the nose, beautiful fruity aromas of red fruit, hints of strawberries, citrus and tobacco. The same flavours extend to the fruit-filled palate with additional earthy and spicy notes, firm tannins balanced by fresh acids and good complexity.
Delicious when paired with roasted red meat, game with rich sauces and aged cheeses.
