Irish whiskey, yes indeed with an e. The Irish claim that they were the first to produce whiskey on the British Isles. A claim that the Scots also agree with. The fact is that as early as the beginning of the 14th century there is writing about the distillation of, mainly, grains. The Irish Bishop Ledred wrote "The Red Book of Ossory" and is considered in Ireland as The Godfather of Whiskey.
