Located in southern Jamaica, the Monymusk distillery (also known as Clarendon) makes pot still rums using a long fermentation process, which can vary from 14 to 30 days, in wooden vats, and lighter rums distilled in column stills using a short fermentation method (24 to 30 hours). With great precision, this 2003 vintage develops layer upon layer of olfactory attributes that are in turn mirrored by the gustatory palette. Delicious flavours of vanilla, chocolate and lemon become increasingly marked.
Profile: Somewhat unusual, the nose is fruity (apple), exotic (guava), milky (almond), spicy (curry), vegetal (cut hay) and camphoric. A note of burnt rubber slips into the core of the aromatic palette. The palate is rich, aromatic (vervain) and mentholated. The finish is mouth-watering.
