Palate

About the distillery

Founded in 1918 in Trinidad, the Caroni distillery became famous for its heavy, oily style of rum. For years, Caroni supplied rum to the British Navy, but the distillery shut down for good in 2002. The remaining barrels were later rediscovered and selectively bottled. The “Employees” series not only honors Caroni’s rich heritage but also pays tribute to the people who shaped its unique character.
