Tasting Notes

Nose

The nose opens with heavy notes of tar, diesel, and burnt charcoal. It’s unmistakably Caroni: smoky, earthy, and intense. More complex layers follow—leather, old cigar boxes, black olives, and stewed prunes. A touch of anise and eucalyptus adds further depth.

Palate

Robust and profound on the palate. Bitter espresso, dark molasses, and tobacco dominate, while undertones of orange peel, toasted wood, and saltiness create balance. The texture is oily, with a layered, powerful structure that unfolds slowly.

Finish

The finish is long, smoky, and intense, with lasting impressions of resin, black pepper, licorice, and a hint of roasted spices. The warmth lingers for minutes. A closing chapter that won’t easily be forgotten.

About the distillery

Founded in 1918 in Trinidad, the Caroni distillery gained global recognition for its heavy, oily rums cherished by connoisseurs. After closing in 2002, the remaining casks found their way into the hands of select independent bottlers. The “Employees” series honors former staff through unique expressions and personal stories. This sixth release, in honor of Ricky “Dirty Harry” Seeharack, is an intense Caroni that captures the very soul of the distillery in a single bottle.
