The second release from our 2018 vintage, and our first ‘major’ bottling. Matured for 3 years in their onsite dunnage warehouse.
Half-tonne mashes of entirely local Concerto barley were fermented for an average of 96 hours before being distilled in our squat 2500L wash still and 1700L spirit still.
An uncompromising hearts cut was then filled into a variety of wood: A combination of 60% First Fill Tennessee Whiskey Casks, 25% First Fill Oloroso Casks and 15% refill Scotch Whisky Casks. Tennessee Whiskey barrels from America add complex sweetness, Oloroso hogsheads from Spain bring rich fruit and refilled Scotch whisky hogsheads highlight the fragrant, spicy character of our unique new make.
Glenwyvis Distillery
GlenWyvis Distillery is located in Dingwall, in the Scottish Highlands and is unique in that it is community-owned. Established in 2017, GlenWyvis marks the revival of distilling in the region after more than a century of absence. The distillery is located on a hill overlooking the Cromarty Firth, making for a beautiful and inspiring location.
A specific feature of GlenWyvis is its focus on sustainability and renewable energy. The distillery is powered entirely by wind, water and solar energy, which fits with their ethos of eco-friendly production. GlenWyvis uses locally grown barley and water from nearby Ben Wyvis, which contributes to the authentic character of their whiskies.
GlenWyvis whiskies are characterised by their clean, fresh and fruity flavour profiles, with notes of apple, pear and a subtle hint of spice. Maturation takes place in a mix of ex-bourbon and sherry casks, ensuring a complex and well-balanced flavour. GlenWyvis Distillery combines traditional techniques with modern sustainability and has quickly built a reputation for quality and innovation in the whisky world.
