John Crabbie - Bonnington Distillery

The Bonnington distillery, the result of a multi-million-dollar investment, was commissioned in 2019 and began production in March 2020, producing an estimated 4,200 barrels a year. It is the first single malt distillery in Leith, Edinburgh, for almost 100 years.

Bonnington Distillery

Bonnington Distillery is located in Edinburgh, Scotland's capital city, and is part of the historic Leith district. Founded in 1798, Bonnington has a long history in whisky production. It was one of many distilleries that flourished in the region in the 18th and 19th centuries, although it later closed. In 2017, the distillery was reopened by the Macdonald family, known for Ian Macleod Distillers.

A distinctive feature of Bonnington is its combination of traditional and modern production techniques. The distillery has both pot stills and column stills, allowing for a wide range of whiskies. Bonnington is also known for using innovative maturation methods, including experimentation with different cask types such as rum casks and port casks, to develop unique flavour profiles. Bonnington's whiskies are characterised by their rich, complex flavours with notes of fruit, spice and subtle smoke, which sets them apart in the competitive whisky world.
