A DISTINCTLY AUSTRALIAN WHISKY

The origins of our whisky are anchored in an uncompromising approach to flavour development. That’s why we use red wine barrels from Australia’s famed wine regions to mature our whisky. When the Barossa Valley is in your backyard, you use those barrels!

We source all our whisky ingredients within a day’s drive from our distillery. Then, in the wildly varied Melbourne weather, our whisky draws out its signature fruity, delicious flavour in just three short years. We call this elemental maturation and it’s why we couldn’t make our whisky anywhere else.

OUR RED WINE BARRELS

A huge amount of flavour and all the colour in Starward comes from our red wine barrels. We typically use shiraz, cabernet and pinot noir barrels that have spent 4 to 7 years at some of Australia’s best wineries.

To keep the fresh red wine taste profile we are able to source these barrels within hours after being emptied from the nearby Yarra Valley and Barossa Valley. Then, they’re lightly charred or steamed. Often, the barrels are still wet with wine when we fill them, giving our whisky it’s bold, fruity flavour.

This whisky was first aged in a fresh red wine barrel from the famed Barossa Valley before finishing in a charred French oak barrel.
