This exclusive cognac from the Fins Bois region was distilled in 2003 and bottled in 2024 after 20 years of oak maturation. Drawn from cask #602 and specially selected for Passion for Whisky, this single cask release is limited in quantity and rich in character – a true showcase of the elegance and depth Fins Bois can offer.
Tasting Notes
Nose
The nose opens powerfully and seductively with aromas of ripe apricot, mirabelle plums and warm honey. A wave of vanilla, roasted almonds, and freshly baked brioche follows. Swirling reveals floral notes of chamomile and linden blossom, with a hint of white pepper and apple compote.
Palate
The entry is round and full, offering flavours of stewed pear, candied orange, and a hint of anise. There is a beautiful balance between lively fruit and well-integrated oak. As the cognac develops, notes of toffee, gentle spices, and a touch of liquorice emerge. A harmonious and mouth-filling experience.
Finish
The finish is elegant and long, with lingering notes of vanilla, hazelnut, and subtle spice. A gentle drying effect on the palate gives the whole a refined and inviting feel. The finale offers a lovely echo of its ageing journey, with hints of dried apple and a touch of muscat grape.
Giboin
Maison Giboin is a small but sophisticated cognac producer that has been in the family since 1830. Through the marriages of Lambert and Giboin, the current company, run by the seventh generation, was created in 1953. They grow Ugni-Blanc (and a little Folle Blanche) on two crûs: L'Hermitage (Borderies), known for its siliceous clay soils that give intensity, and Apremont (Fins Bois), with chalky soils for fruity finesse. Everything is done in-house: harvesting, distillation, ageing, blending and bottling. They produce only limited volume and stay true to craft and terroir. A house that clearly deserves a place in the spotlight of Cognac lovers.
