Kilchoman 2006 - 2010 #2006/81 Single Cask Release is one of the earliest single cask expressions from this relatively young but now respected Islay distillery. Distilled in 2006, a year after Kilchoman was founded, and bottled in 2010, this single cask release offers a unique look at the distillery's character in its early days. Maturation on a single ex-bourbon cask delivers a pure, unfiltered expression of peat smoke, citrus and malt. This bottling is not only a taste experience, but also a piece of history of the revival of Islay's whisky tradition.
Tasting Notes
Nose
Bright and lively: peat smoke, green apple, lemon zest, fresh grain, and light vanilla. Hints of sea salt and wet ash in the background.
Palate
Punchy and direct. Peat, white pepper, lemon sorbet, toasted almond and a creamy, malty core. Youthful but intense.
Finish
Dry, smoky, and salty. Lingering notes of charcoal, lemon oil and a touch of white pepper.
Kilchoman Distillery
Kilchoman Distillery is located on the west coast of the island of Islay, near the small village of Kilchoman. Founded in 2005 by Anthony Wills, it is the first new distillery on Islay in more than 120 years. Kilchoman has quickly made a name for itself through its traditional approach to whisky production.
A unique feature of Kilchoman is that it is one of the few distilleries in Scotland to use a full "grain-to-glass" process. This means Kilchoman grows, malts, distils and matures its own barley on the grounds of Rockside Farm, where the distillery is located. This approach ensures exceptional control over the quality and character of their whisky.
Kilchoman whiskies are known for their robust and smoky profile, with pronounced notes of peat, fruit and spice. The distillery mainly uses ex-bourbon casks and sherry casks for maturation, which contributes to the complexity and depth of flavours.
The combination of traditional methods, an innovative approach and a strong focus on quality makes Kilchoman a notable and respected name in the world of Scotch whisky.
