Regional single-farm barley. Barley malt from the traditional malting floor. Washbacks from our own cooperage. Bimber's production process reads like the ideal of a whisky distillery. Although based in London, the craft distillery is not influenced by the fast pace of the metropolis. With attention to detail, 7-day fermentation and two direct-fired pot stills, the distillery produces sought-after English whisky.
The Hellespont, now known as the Dardanelles, stretches between the European peninsula of Gelibolu and the north-west of Asia Minor. Up to six kilometres wide, the strait is a geographical dividing line between Europe and Asia. Swimming from shore to shore here connects continents. Like Alex and Nick Ravenhall, when they crossed the water accompanied by a warm breeze.
The New Zealand brothers are as dedicated to the whisky industry as they are to the oceans. With their non-profit organisation Whisky and Waves, the open water swimmers collect donations for the marine conservationists at Sea Shepherd. Once again, they were supported by the iconic Bimber Distillery.
Each of their swims through the Dardanelles was accompanied by single malt from the Londoners, attached to their arms and legs. Bimber then filled the intercontinental drams back into the cask and perfected them in Moscatel Cask No. 439 to create the single cask bottling Intercontinental.
The bottling is limited to 242 bottles worldwide!
Bimber Distillery
Located in west London, UK, Bimber Distillery was founded in 2015 by Dariusz Plazewski, a whisky enthusiast with Polish roots. The distillery has quickly made a name for itself thanks to its dedication to artisanal production methods and high quality standards.
A unique feature of Bimber is its use of traditional manual craftsmanship in every aspect of production. The distillery malts their own barley on traditional malting floors, slowly ferments in wooden washbacks and distills in small copper pot stills. This process creates a rich and complex spirit. In addition, Bimber matures their whisky in carefully selected casks, including ex-bourbon, sherry and new American oak casks, resulting in varied and deep flavour profiles.
Bimber whiskies are known for their full-bodied, fruity character with notes of vanilla, honey, dried fruit and a subtle spiciness.
The combination of an urban location, a strong focus on craftsmanship and a commitment to quality makes Bimber Distillery a notable and respected name in the world of whisky.
