Nose

What a character, full-bodied, spicy, sweet and, above all, lots of aroma. Red stewed apples, toasted nuts and sum sultanas. The lovely PX sherry cask has added a hint of balsamic to the aroma.

Taste

Bitter sweet chocolate, of those chocolate sultanas. But also enjoyed chocolate blasamic sauce over stewed pears. Full-bodied and round. Mild, but with character due to the firm alcohol. Caramel fudge completes the finish.

Finish

The mild sweetness of the flavour, gets a lot drier in the finish. But what an extremely long finish, delicious.

Teeling Whiskey Company was founded in 2012 by brothers Jack and Stephen Teeling. Their family’s involvement in Irish whiskey dates back to 1782, when Walter Teeling established a small distillery on Marrowbone Lane in Dublin. In 2015, the brothers opened a new distillery at Newmarket Square in the historic Liberties district. It was Dublin’s first new whiskey distillery in more than 125 years, bringing production back to a city that was once one of the world’s great whiskey centres.

The distillery operates three copper pot stills and produces spirit for styles including single pot still, single malt and peated malt whiskey. Triple distillation creates a smooth foundation, while Teeling distinguishes itself through long fermentations and a strong interest in unusual cask types. Alongside bourbon and sherry wood, the company uses rum, port, Madeira, wine and various forms of virgin oak.

Teeling is known for fruit-forward, lively Irish whiskey with considerable attention to texture, spice and cask influence. Its combination of historic family roots, modern distillation and creative maturation has made the brand an important name in the revival of Dublin whiskey.
