An aroma of sweet barley with wafts of peaty smoke, kippers and well baked apple crumble. Tastes of lightly honey sweet, subdued clean rather than sooty smoke with peaty vegetal notes, sweet barley water, light spice and vanilla oak.
Cooley Distillery
Cooley Distillery is located at the foot of the Cooley Mountains in County Louth, on the north-east coast of Ireland. Founded in 1987 by Dr John Teeling, Cooley was the first new distillery in Ireland in over 100 years and has since played an important role in the revival of the Irish whiskey industry.
A unique feature of Cooley Distillery is its ability to produce both single malt and single grain whiskeys, allowing for a wide range of flavour profiles. The distillery uses both copper pot stills for malt whiskey production and column stills for grain whiskey production. This offers the flexibility to create different styles and flavours.
Cooley whiskeys are known for their rich and complex flavour profiles, with notes of fruit, honey, vanilla and sometimes a subtle to firm smokiness. The whiskeys are aged in a variety of casks, including ex-bourbon, sherry and wine casks, making for a deep and refined flavour.
The combination of a beautiful location, diverse production methods and a strong commitment to quality makes Cooley Distillery a respected name in the world of Irish whiskey.
