Floral and inviting, with orange blossom, dark chocolate and a rich touch of tropical plum pudding. Full-flavoured, distinctive and surprisingly layered.

Fresh and fruity, with orchard fruit, juicy pear and a gently spiced note of roasted hazelnuts. Maturation in an apple brandy cask gives it a particularly lively character.

Rich sherry notes combine with old leather, black pepper and subtly spiced smoke. The darkest and most robust whisky of the four.

Blackwater Distillery was founded in 2014 by former television producer and whisky writer Peter Mulryan. This independent microdistillery is located in Ballyduff Upper in West Waterford, beside the river from which it takes its name. Blackwater began with gin and other spirits before production of its own whiskey started in 2018, inside a converted 1950s hardware store.

The distillery aims not only to preserve older Irish production methods, but also to examine and revive them. Its single malt and pot still whiskey use Irish grains including malted and unmalted barley, oats, wheat and rye. Long fermentations, often lasting more than one hundred hours, and double distillation at a relatively low strength help retain as much grain character, texture and flavour as possible.

Blackwater is best known for historical and unconventional mash bills, transparency about origin and production, and an independent view of the rules surrounding Irish whiskey. Its spirit can therefore range from fruity and malty to full, oily, spicy or smoky. This approach has given Blackwater a distinctive position within the modern Irish whiskey industry.
