With a combination of maturation in both first fill and refill Oloroso sherry casks, this bottling offers a captivating blend of peat smoke and rich sherry influences. The result is a powerful, complex whisky bottled at 100 Proof (57.1% alcohol) that highlights the typical characteristics of Caol Ila, but with a rich, sweet-spicy twist thanks to the influence of the sherry casks.
Tasting note
Nose
The nose opens with a delicate balance of peat smoke and sweet sherry notes. Aromas of sultanas, figs and caramelised orange lurk under layers of ash, charcoal and a hint of saltiness typical of Islay.
Taste
On the tongue, the whisky is powerful and mouth-filling, with flavours of roasted nuts, dark chocolate and ripe dark fruits such as plums. The peat is present but subtly intertwined with spices such as cinnamon and cloves, creating a wonderful balance.
Finish
The finish is long and warming, with lingering notes of smokiness, oak and a slight bittersweet touch of sherry. A gentle hint of citrus and spice lingers, giving the whisky an elegant finish.
Caol Ila Distillery
Caol Ila Distillery is located on the picturesque east coast of the island of Islay, overlooking the Sound of Islay, a strait that separates Islay from Jura. Founded in 1846 by Hector Henderson, the distillery has a rich history and is the largest distillery on Islay.
A specific feature of Caol Ila is the production of both peated and unpeated single malts. The distillery is particularly famous for its heavily peated whiskies with elegant, maritime influences. The whiskies often have a distinctive flavour profile with notes of smoke, sea salt, citrus, and a subtle sweetness.
Caol Ila traditionally uses copper pot stills and water from nearby Loch nam Ban. The whiskies are mainly matured in ex-bourbon casks, which contributes to the smooth, balanced flavours.

Signatory Vintage
Signatory Vintage is one of the most respected and recognised independent bottlers in the whisky world. The company was founded in 1988 by Andrew Symington and is based in Pitlochry, Scotland. Signatory Vintage is known for its impressive collection of single malt and single grain whiskies sourced from various Scottish distilleries.
