The Caol Ila 7 years 2017 - 2024 (#DL18766) is a particularly interesting expression from the famous Islay distillery Caol Ila. This whisky is a single cask bottling, released in the Collection Foundations series, especially for La Maison du Whisky. Tasting note
Nose
The classic peaty smoke of Caol Ila emerges immediately, but is quickly enriched by the sweetness of the rum casks. Expect aromas of candied pineapple, tropical fruit, and molasses, mixed with the briny and ashy notes typical of Islay whiskies.
Taste
On the tongue, there is a perfect balance between sweet and smoky flavours. The tropical influence of the Barbados Rum cask brings out notes of ripe bananas, caramelised sugar and vanilla, which blend harmoniously with the smoky peat and a hint of sea salt.
Finish
The finish is long and smooth, with lingering smoke and a sweet aftertaste of rum. Hints of spices such as ginger and cinnamon also remain, keeping the finish interesting and layered.
Caol Ila Distillery
Caol Ila Distillery is located on the picturesque east coast of the island of Islay, overlooking the Sound of Islay, a strait that separates Islay from Jura. Founded in 1846 by Hector Henderson, the distillery has a rich history and is the largest distillery on Islay.
A specific feature of Caol Ila is the production of both peated and unpeated single malts. The distillery is particularly famous for its heavily peated whiskies with elegant, maritime influences. The whiskies often have a distinctive flavour profile with notes of smoke, sea salt, citrus, and a subtle sweetness.
