Before and now, in the new stage, the winery has deserved to be included, twice in the last ten years among the 100 Best Wineries in the World, in 2011 and 2017.

Dry fortified wine aged in American oak barrels under flor yeast and later oxidative ageing.

The Palo Cortado is a legendary wine.

Its name derives from one of the most common practices in the bodega; the chalk marking of the butts to record their development. In fact Palo Cortado refers to the cross mark made by the cellar master when finding a butt with unusual organoleptic characteristics. This typically means a butt with a stronger body, which indicates a different evolution for a wine.

Therefore, the Palo Cortado El Maestro Sierra is a fortified wine of varied making and ageing. Its beginnings are those of a Fino, which will develop under the flor yeast. But its end is that of an oxidative ageing Oloroso. The result is a wine of a bright mahogany colour, clear, with bronze tonalities. It shows the delicate and elegant aromas of an old amontillado, and at the same time the roundness of an Oloroso.

Tasting Notes by El Maestro Sierra:

To the senses: big, long, balanced and elegant.
For El Maestro, it goes with… game meats.

Tasting Notes by SherryNotes (Ruben Luyten):

Nose: highly expressive. There’s cinnamon pastry, roasted chestnuts. Light cedar oak, dried mushrooms, walnuts, tobacco and traces of maple syrup. What’s really great about this nose, in my opinion, is a subtle farmy side, hints of wet dogs after the rain, as well as the light engine / diesel aroma. It adds to the character of this already impressive wine.

Mouth: warm, balancing between (almost) sweet notes, gentle acidity and some clove bitterness. Dry, with a generous peppery (curry) side and some coastal hints. Dark roast coffee beans, roasted hazelnuts, walnuts and almonds. Orange peels, subtle herbal / leafy notes. A very deep, persistent profile. Very long aftertaste, dry and slightly salty.

Summary: I adore the nose of this Palo Cortado, it's perfectly balanced and it shows a few unique touches. A tad fierce and dry on the palate perhaps, but on the other hand this gives it some tension. A very complex and impressive wine. One of the gems from El Maestro Sierra.
