Yamazaki Distillery was established by Shinjiro Torii in 1923 and is regarded as Japan’s first malt whisky distillery. Torii wanted to create an authentic whisky shaped by Japanese nature and suited to the Japanese palate. He chose Yamazaki, southwest of Kyoto, for its pure water, humid environment and clearly defined seasons. The Katsura, Uji and Kizu rivers meet in this area, creating conditions particularly well suited to whisky maturation.

Suntory Shirofuda, the first whisky produced by the distillery, appeared in 1929. Yamazaki was introduced as a single malt brand in its own right in 1984 and later developed into one of the best-known Japanese whiskies in the world.

Yamazaki uses different types of washbacks, still shapes and distillation methods to create a broad range of spirit styles. Cask selection is equally varied, including American oak, Spanish sherry wood and Japanese mizunara. Its character can therefore range from fresh and fruity to rich, spicy and powerful, often revealing ripe fruit, honey, incense, chocolate and refined oak.
